It's time to stop hunting for the "best Indian restaurant" and befriend your local Indian so that they invite you home. You'll get to experience India's food diversity and will realise that the beliefs you're holding onto about Indian food are myths.
Indian food is a vibrant tapestry of flavors and spices, featuring diverse regional cuisines that range from the fiery curries of the south to the aromatic biryanis of the north. It showcases a symphony of tastes, textures, and colors, reflecting the country's rich culinary heritage.
Well researched and fascinating! Indian food takes so much time and love and patience. I liked how you parsed out the differences in the food based on region. Thank you!
Oh Perzen! Half my family is Indian, and the other half bengali. I make and eat Indian food on a daily basis. I still remember the first time I went to a punjabi friend’s house her grandma made samosas and coriander chutney and I said, I will marry an Indian man one day just so I can eat this stuff daily.

That’s a really good reason to marry an Indian in my books 😂 I had a Bengali business partner and she made the best food.
