I chanced upon my own version when I barcecued chicken tikkas but being Asian I made enough for the neighbourhood but only a few drunken folk showed up and, being English, gorged on dry sausages to line their stomachs to drink some more. I was left with a bowlful of perfectly charred chicken pieces. I cried a little. Next day, I made my makhani sauce and added them... Oh my word it was divine. So that's how I now do it (when I can be bothered to fire up the bbq, obvs)
Hahahaha I cook for shared meals like that too! Had a shared lunch at office. I took a massive glass box of food and someone bought 5 pcs of Poppadum....but also who are these people that choose dry sausages over charred chicken! Glad you discovered the joy of that original style of butter chicken.
When I can’t be bothered with the bbq, I just char on a pan and bake them first. That works too
“Burp out a chicken” was a comical image in my head!! My favourite Indian dish is perhaps bhindi masala. I just love, love, love okra so much that it’s hard for me to ignore when it’s on the menu. I’ve started to enjoy malai kofta too, and am curious about all the non-butter chicken dishes at my local Indian restaurant. Pistachio chicken, for example, sounds absolutely delicious. That said, I also quite enjoy their rendition of a butter chicken 😉
So glad to know you’ve come across Bhindi Masala even though I detest okra 😝. I do like Kurkure Bhindi which is when you toss thin slices of okra in a spicy seasoning and deep fry them. Those I love. Malai Kofta is my go to veg order only because it’s a headache to make at home
Oh gosh, this french white palate of mine is guilty of loving butter chicken and must admit that I have eaten some very orange ones in my life 🙈 but I hear you and need to expand my taste of indian food

So few more “easy” recipes online skip the fenugreek leaves, the ghee and the cashews and for me they are the building blocks to a good butter chicken

Dunno if it's controversial, I certainly didn't come up with it, but I sprinkle mine with dill fonds and fenugreek leaves
Fenugreek leaves and Hing (asofoetida) are an Indian home cooks best kept secrets. I love the smoky umami that the dried fenugreek leaves adds.
