During the lockdown, my in-laws got stuck in NZ. Trapped and homesick with no certainty on when they could go home. I couldn't buy them a ticket home, but I could bring a piece of Mumbai here. Which is what I did with these pakoras.

This is so true! The first time I cooked Indian food was when I moved across the country and was craving my moms beef curry.
